CBD Chocolate Caramel-Stuffed Cookies with Sea Salt

This is the meal that will win you friends wherever you go. Each soft, chewy chocolate cookie conceals a gooey caramel center laced with CBD; biting into one is like discovering the golden ticket of desserts, complete with a flaky sea salt finish. They're best eaten warm to keep the insides melty and mushy. They do, however, freeze well, and you can always heat them up little before serving to ensure that you don't miss out on the caramel lava flow.


  • 1/2 cup (1 stick or 113g) unsalted butter, room temperature
  • 1/2 cup (106 grams) dark brown sugar, packed
  • 1/4 cup (50 grams) granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large Pete and Gerry’s Organic Egg
  • 1 1/4 cup (150 grams) all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 cup (42 grams) cocoa powder
  • 1 tablespoon whole milk
  • 12 CBD-infused caramel candies (or soft caramel squares)
  • Flaky sea salt, for topping


  1. Preheat the oven to 350°F. Line two baking pans with parchment paper.
  2. On medium-high speed, combine the butter, brown sugar, and granulated sugar in the bowl of a stand mixer until pale and fluffy. Add the vanilla and egg and continue to beat for another minute, scraping down the sides of the bowl as you go.
  3. To the wet ingredients, add the flour, baking soda, cocoa powder, and milk and mix until just incorporated. The dough will be extremely sticky; this is normal. If it's too sticky, put it in the fridge for 10 minutes.
  4. Roll a 2 tablespoon amount of cookie dough into a ball, then flatten it into a circle. Place an unwrapped caramel candy in the center of the circle, then wrap the dough around the caramel, making sure to completely cover it. Pinch the dough together, then softly roll it in your hands to smooth it out. Repeat with the remaining candies on a baking sheet lined with parchment paper.
  5. Bake for about 10 minutes, then sprinkle with flaky sea salt. They'll be extremely soft. Remove the cookies from the oven and set aside for at least 5 minutes before eating, as the caramel centers will be hot and gooey.
